BELUGA
The biggest in size among the caviar providers, Beluga is the only fish- hunter of its species. Being very scarce , it is difficult to obtain more than one thousand units in each fishing season.
Beluga is an extremely wild and robust fish with a big mouth, constantly moving around in order to catch its favourite food. It can be up to 4 meters long and weigh more than 1000 kilos. It normally weighs between 40 and 300 kilos and the amount of caviar obtained from it is about 15% its weight.

The colour of caviar obtained from Beluga varies from dark to very light grey. The lighter the colour, the higher its value. Beluga caviar is also highly valued for the large size of the eggs and their extremely thin membrane.
