STURGEON
Caviar is obtained from the eggs of a fish called sturgeon.

Sturgeon belongs to a group of fishes which have a prehistoric form . Instead of thorns, they have flat bones which depending on the specie , are more or less uneven. All species of sturgeon have four beards under the snout which they use as tactile device.

There are more than 24 species of sturgeon in the world , eight of which live in the Caspian Sea, providing more than 90% of the world-wide production. Their existence can be traced back to 120million years ago.
Before the Sevillian Guadalaquiver fish pond was definitely closed in the fifties, there was caviar in Andalusia. It is known that caviar was consumed by the Phoenicians who lived in the Cadiz Bay about 3000. years ago and Cervantes talked about " a black luxury called Cabial"
