HISTORY
In the beginning of XIX century, The United States was the major producer of caviar in the world. Caviar was so abundant that even in the most popular bars it was much cheaper than salted peanuts. At the same time, the Russian Zars showed their hospitality, serving their guests with mountains of caviar. In Great Britain , the royal family reserved all the sturgeon in the country for its own use. But they were other times.....

Forgotten for decades, caviar was introduced in the aristocratic circles of Paris by Zar Nicolas at the end of the 19 century. In Iran, due to religious considerations, the production of caviar was not formalised until 1952, the year in which the government founded the Iranian Shilat Company which still is the only organisation controlling the production and trading of caviar in Iran.

The fishing seasons are spring( 70% of yearly production) and autumn.
