Baeri caviar (Siberian sturgeon) - Acipenser baerii

Species: Acipenser baerii (Baeri, Siberian)

Biological origin: Sturgeons bred in pure, cold water, selected for their genetic purity and excellent traceability. Sustainable production that guarantees the quality of each pearl.

Colour and grain: Shades of dark brown to pearly grey; medium grain with homogeneous lustre, firm and creamy texture.

Aroma and taste: Elegant and balanced profile with notes of butter, walnut and soft saline nuances. Clean, lingering finish with a velvety mouthfeel.

Service: Serve between 0-4 °C, open just before serving. Use mother-of-pearl spoon so as not to alter the flavour. Ideal on blinis or thin toasts with crème fraîche.

Pairing: Champagne brut nature or blanc de blancs, iced artisanal vodka, or dry and mineral white wines (chardonnay, godello, riesling).

Conservation: Keep refrigerated between 0-4 °C. Once opened, consume within 48 hours. Vacuum-packed in an airtight tin with quality seal and visible best-before date.


Selection and traceability: Each batch of Baeri Caviar is manually sorted by size and colour of the grain, guaranteeing homogeneity and freshness. Complete control from origin to final delivery.

How to taste it: Temper 2-3 minutes outside the refrigerator before serving to enhance its natural aromas. Avoid metal utensils. For a first tasting, the 30-50g format is recommended; for events and special occasions, 125-250g.
