Species: Acipenser schrenckii × Huso dauricus (hybrid)

Colour and grain: Shades varying from dark grey to light golden. Large, firm and shiny roes, with a diameter of more than 3 mm, guaranteeing an exceptional texture.
Aroma and taste: Intense and harmonious profile, with notes of fresh butter, dried fruits and a long, elegant finish. Creamy, unctuous and persistent texture, worthy of the best caviars in the world.
Maturity: The specimens reach production age between 8 and 10 years and can live up to 60 years and weigh over 50 kg.
Service: Serve between 0-4 °C, open just before serving. Use mother-of-pearl spoon to preserve its flavour. Ideal on blinis or toast with crème fraîche.
Pairing: Champagne brut nature, premium vodka or mineral white wines such as chardonnay or dry riesling.
