Species: Spindle spindle (Beluga)
Biological origin: Beluga sturgeon originating from the Caspian and Black Seas, reared in controlled habitats that replicate the natural conditions of these deep, cold waters.
Colour and grain: Large eggs, the largest of all caviars, with light grey to anthracite tones. Silky texture and firm grain that bursts softly on the palate.
Aroma and taste: Subtle and lingering flavour, with milky notes, fresh butter, walnut and a delicate marine touch. Its elegance and creaminess make it the most exclusive and sought-after caviar in the world.
Maturity: Beluga sturgeon reach maturity between 18 and 25 years of age, which gives their roe a unique complexity and incomparable texture.
Service: Serve between 0-4 °C, open just before serving. Use mother-of-pearl spoon so as not to alter its flavour. Ideal on blinis or fine toast with crème fraîche.
Pairing: Vintage champagne, ultra-pure vodka or mineral white wines (chablis, albariño, dry riesling).
Conservation: Keep refrigerated between 0-4 °C. Once opened, consume within 48 hours. Vacuum-sealed cans with traceability control and Imperial Caspian quality seal.

How to taste it: Allow to cool 2-3 minutes out of the refrigerator before serving. Avoid metal utensils. Ideal for gourmet experiences or haute cuisine pairings.
